Turkey Chili

21 Day Fix – .5 green, 1 red, .5 yellow

I LOVE my crockpot, and so there was no question about this recipe. I prefer ground turkey to ground beef, but you can modify with extra veggies, including corn, or even serve with rice.

Makes eight one-cup servings.

  • 1 tsp olive oil
  • chopped onion
  • 3 cloves chopped garlic
  • 1 Tbsp chili powder
  • 2 15oz cans of black beans
  • 1.5 lbs ground turkey
  • chopped bell pepper
  • 1.5 tsp ground cumin
  • .25 tsp cayenne powder
  • 1 15 oz can of diced tomatoes

  1. Combine all ingredients in crockpot
  2. Cook on low for 6-8 hours, on high for 5-7 hours, or until turkey is cooked

I love crockpots so so so much! They’re so easy, and require little thought, and cleanup, especially if you have slow cooker liners. They’re essentially plastic bags that go in a crockpot to keep it clean. And yes, friends, you CAN cook inside it! I’ve never had to wash out my crockpot before, making cooking with it a BREEZE.

Although it doesn’t sound like much, 1 cup of this chili is very filling! You could modify by adding more vegetables and less beans, especially for you 21 Day Fix folks!
